Overview

Pancetta is made from the same cut of pork as bacon - and there the similarity ends. Columbus pancetta is consistently - and exceptionally - lean, cured with salt and a handful of spices, tightly rolled into the shape of a large salame and then dry-cured and aged naturally. No water is added. Nor is it smoked. Its intense flavor is key to a Chicken Rollatini. It's also great in sauces, soups, salads, quiches, even pizza. This product needs to be cooked thoroughly before consuming.
